The Story of Falafel Taco
Falafel Taco began in our family kitchen, where cultures, flavors, and love came together.
It all started when Jonathan Langsam, a Jewish chef, met Rosie Hernandez Langsam, a vibrant woman from Veracruz, Mexico. Their life together became a delicious fusion of Jewish, Mediterranean, and Mexican traditions—where every dinner told a story.
Tacos were a family staple, but one day, with two of their daughters embracing a vegan lifestyle, inspiration struck. Jonathan and Rosie crafted falafel, tahini, and Israeli salad, tucked lovingly into fresh tortillas. That night, the Falafel Taco was born—a perfect blend of their roots and creativity.
Their journey led them to explore the Mexican Jewish experience, uncovering stories of resilience from the days when Jews had to hide their identities under Spanish rule. Inspired by those untold histories, they began blending flavors and honoring both heritages, creating food that feels familiar yet excitingly new.
